Eden Hazard missed the game for Chelsea because of a knock he sustained in the 1-0 win over West Bromwich Albion on Sunday.
Sunderland stayed a point adrift at the bottom after 16 games.
Snedden announced the decision to staff at a meeting on Tuesday following Parker’s historic win over Andy Ruiz at Vector Arena on Saturday night, which Duco Events organised.
“Joseph’s win over Andy Ruiz last Saturday night nicely bookends my two years at Duco Events,” Snedden said.
“When I started working with David Higgins and Dean Lonergan in 2014, the objectives were to move Joseph from a boxing ranking outside the top 15 to a world championship title.
“Seeing first hand, the creativity, drive, willingness to break new ground, and determination to succeed amongst a small group of staff is something to behold.
“I leave Duco next week knowing those objectives have been fully or substantially achieved.”
Snedden had previously been the chief executive of Rugby New Zealand 2011 – the company in charge of running the 2011 World Cup – and head of New Zealand Cricket.
Duco Events’ director and co-founder David Higgins will take over the ongoing development of Parker in Snedden’s place.
